I was in the midst of making marmalade but after getting most of it done realized there was no sugar so now we have to go to the store.
To make good marmalade you need sevile oranges. They are only sold for about two weeks in Jan. or Feb. We have been asking every time we go in to Napanee to shop and then they arrived when we weren't looking . A friend picked some up for me so I wouldn't miss them.
The sevile is so sour you could never eat it . It is just for making marmalade.
You have to squeeze the juice and pulp ,keep that and then slice the peal very thinly . I cooked the pits and pith together to make pectin .strain that and add to the other stuff. You cook it untill the peal is soft and tender then add the sugar and boil untill ready. I think I am going to add some boxed pectin too. I am just waiting now for the sugar. I have added a couple of sweet oranges too.
It is cold to-day but bright and sunny. The other night we watched out the window as a deer nibbling away at the apple tree then went and had a munch on the current bush.
It has been so bright at night and then the reflection off of the snow.
